Baby Green Kale with Onions

Baby Green Kale belongs to the cabbage family and is a Brassica oleracea variety.  It is rich in nutritional values such as calcium and iron, but also in vitamins A, C and K1. This vegetable helps keep cholesterol levels normal and can be eaten both cooked and raw.

Baby Green Kale with Onions

Ingredients

  • a cup of pine nuts
  • a spoon of extra virgin olive oil
  • 1 cut onion
  • 1 minced garlic clove
  • Baby Green Kale q.s.
  • Salt and pepper to season
  • Raisin to season

Method

First, toast the pine nuts in a pan over medium - high heat for two minutes until they are crispy. In another pan, add the extra virgin olive oil and onion and cook until it begins to brown. Now, add the garlic and mix. Gradually add the Baby Green Kale and let it dry. Season with salt and pepper. Turn off the heat and add the raisins and toasted pine nuts to the pan. Let it cool for five minutes and serve. You can repeat the same recipe with spinach too. Enjoy your meal!
