Lamb’s lettuce: interesting facts and a recipe

Lamb's Lettuce leaves are round, tiny and tender and have a sweet flavour.

Contains minerals vitamins of groups A, B and C and has purifying and diuretic effects.

It can be used as an ingredient for a traditional salad or cooked to season second dishes such as meat or fish dishes. Lamb's Lettuce is the perfect main ingredient for smoothies, pesto, sauces, and pureed soups. Today we suggest an easy and quick salad recipe, great if you have little time to eat and if you want to stay in shape without compromising on taste.

Lamb's Lettuce & Salmon Salad with Guacamole sauce

Ingredients

Guacamole Sauce

  • 1 ripe avocado

  • 3 small tomatoes

  • A squeeze of 1 lemon

  • Half an onion

  • Black Pepper q.s.

  • 2 spoons of extra virgin olive oil

  • Salt q.s.

Salad

  • 1 package of Lamb's Lettuce

  • 160 grams of smoked salmon

  • Balsamic vinegar q.s.

  • Extra virgin olive oil q.s.

  • Salt q.s.

Method

First, prepare the Guacamole sauce. Peel the avocado, take its stone away and put it in a bowl. Flatten it with a fork and add the lemon squeeze immediately to prevent it from becoming black. Mix and add salt and pepper. Peel the onion and chop it. Then, add the onion to the sauce. Cut the tomatoes into small pieces and add them to the mixture while mixing. If you want, you can add some extra lemon squeeze. Put the mixture in the fridge for 10 minutes.

Wash the Lamb's Lettuce and put it in a bowl. Add the salmon, previously diced, and add balsamic vinegar, extra virgin olive oil, and salt. Serve with Guacamole sauce and some whole toasted bread. Enjoy your meal!
